Nickie & Matt's Wedding Cake

This past weekend I had the honor of making my best friends Nickie & Matt's wedding cake!

Here is the final product! But first I will go into more details...

3 days prior to Saturday I began baking, and baking, and baking! 11 white cakes (made from scratch may I add) later...
My main workstation during the 3 days of baking! Thank you to my brother-in-law, David, for letting me create a huge mess in your kitchen!




His double ovens---They saved me so much time! Not sure about that Royals apron though!


Cake ingredients...

51 eggs, 10 lb flour, 8 lb sugar, 3 lb crisco, 1 gallon of milk to name a few


Filling ingredients...

3 Jello Mixes

3 quarts of heavy whipping cream


Butter cream ingredients...

1 lb butter

7 pounds of powdered sugar!


Middle tier baking...

5 batches of butter cream... icing the crumb coat (or "dirty icing" as cake boss says)


after putting on the second butter cream coating and adding the stencil to the middle tier...

My Birthday Bronwen Weber St. Louis Cardinals Cake

It's almost too much to believe! My amazing friends Lisa & Matthew got me another cake from the Frosted Art Bakery for my birthday!! 2 years in a row! I am such a lucky girl!

My cake was St. Louis Cardinals themed!!

I loved it!!!

Lisa & I with the cake right before we cut into the cake and ate it! It was sooooo good!! Great job Bronwen :) And thank you Lisa!!!

Nickie & Matt's Couples Shower--Hawaiian Theme!

Nickie & Matt are getting married! And they are going to Hawaii for their Honeymoon! In honor of their honeymoon location, we threw them a Hawaiian themed couples shower! Of course, I had to make cupcakes!

Marshmallow Fudge Mania!

A while back I was given a great cook book, Hungry Girl-200 Under 200! I was in the mood for chocolate, so I decided to make the Marshmallow Fudge Mania! Each piece is only 66 calories and 0.5 g fat!!



Ingredients...
Fudge Brownies Mix
2 cups pure pumpkin
1/2 cup Jet-Puffed Marshmallow Creme
2 Tablespoons of Hershey's Lite Syrup




Mix together brownie mix, pumpkin & chocolate...Stir marshmallow creme...
Swirl half of the marshmallow creme on top of half of the brownie mixture & repeat...

Bake at 350 degrees for 35 minutes! Cook cake & refrigerate for at least 2 hours before serving. Then cut into 36 squares. Personally, I thought the squares were a bit small...2 squares = just 132 calories, so that's not too bad ;)

At work there is an Easter Goodies Bake Sale. Since my turkey pops were such a hit the last time, I decided to do more of Bakerella's Cake Pops!

Valentines Day--Banana Cream Pie

For Valentines Day I made one of Steve's favorites--Banana Cream Pie!
the ingredients...

graham cracker crust:
2 1/2 cups of crushed graham crackers
1/4 cup of melted butter
1/4 cup mushed bananas


1/3 cup sugar

after crushing graham crackers, blend together the remainder of the ingredients in a food processor

bake at 350 degrees for about 15-20 minutes (until golden brown)

chill the crust

filling:
1 large package vanilla pudding mix (prepare as directed)



4-5 bananas sliced and coated with lemon juice
cool-whip
